Canadian entrepreneur Jackie Fast made waves in 2018 as one of the finalists on the Apprentice. Soon afterwards Jackie launched the world's first ice wine made from single-vineyard Roussanne, a lusciously textured and scented grape originally from the Rhône Valley. This is the 2016 Rebel Pi, the first and so far only vintage of a delectable dessert wine that has been served at Michelin star tables and in some of the finest wine shops.

It comes from Jackie's home, the Okanagan Valley in British Columbia, and specifically Penticton. It is made in the traditional, time-honoured, but rare practice of leaving the grapes to ripen on the vine long beyond the normal harvest time to the point where they are literally frozen in the depths of winter. This freezing concentrates the rich sugars in the grape even further and results in minute quantities of sweet wine. These low yields and the fact that proper icewine can only be made in precise locations make it a rare, sought-after treat. Only 1,600 bottles of Rebel Pi were produced.

Canada makes some of the world's greatest icewines and this is no exception. It's a fine statement at the end of any meal!
