Every Zweigelt bunch is cut in half, or 'green harvested', in July to get looser bunches that will stand in better stead to ripen fully. Fermentation on skins for ten days then straight into old acacia barrels. No filtration, no fining and a tiny amount of sulphites added before bottling.
